Madrid Fusión Alimentos de España, the world's most influential gastronomy congress, will hold its 25th edition with all of its stages and exhibition space at IFEMA MADRID (Halls 12 and 14) on 1, 2 and 3 February 2027. The world’s most influential culinary summit will include a major live experience, with many activities and new training spaces.
In 2027, the congress will extend its surface area, occupying the ground floor of Hall 14, as it has done until now, and all of Hall 12 at IFEMA Madrid, a new space that integrates all stages, areas from the other congresses and the exhibition space on the same floor for the first time.
This marks a special edition for its 25th anniversary, designed to celebrate the legacy, influence, and transformative power of a conference that changed the way cuisine is understood by fostering the exchange of knowledge on a global scale. It will be particularly commemorative and will bring together some of the most influential figures in the recent history of international gastronomy in a programme designed to celebrate the great moments that have turned Madrid Fusión into a global reference.
It will feature numerous surprises, unprecedented encounters, special presentations and exclusive formats to pay tribute to the chefs, ideas and culinary innovations that have passed through the congress over the past quarter of a century. It will also bring together thousands of attendees, visitors and exhibiting companies at the major annual culinary gathering, while also reinforcing some of the spaces that are already part of the event’s identity, such as Dreams #spainfoodtechnation, Madrid Fusión Pastry or The Wine Edition Wines from Spain, which will continue to expand the dialogue between cuisine, science, wine, technology, business and creativity.
This 25th anniversary follows on from a 24th edition that confirmed the key moment that Madrid Fusión Alimentos de España is currently enjoying. In 2026, the congress brought together more than 25,000 visitors from 61 countries, 224 exhibiting companies, more than 1,700 attendees and more than a thousand accredited journalists, consolidating its position as the leading international gastronomy forum.
