Chefs Juan Alcaide and Pablo Álvaro, who opened the Japanese fusion restaurant Umiko, together with pastry chef Alejandro García, have created this innovative Japanese fusion bakery, launched in 2022, creating sweet treats using the best dough and focusing on delivering outstanding flavour and colour. In addition, their Roscón de Reyes kings cake won the 2023 of the Best Artisan Roscón de Reyes Championship in Madrid!
Located on the site of the first Umiko restaurant, in their window they showcase all the different products they make every day, fusing Japanese cuisine with European and especially French baking and confections. Inside there are several tables where you can sit and enjoy the pastries and cakes they make there.
The star dish is ‘mochi’, the ultimate Japanese confection, which can be filled with all kinds of ingredients, such as hazelnut praline, green tea with yuzu, strawberry, chocolate, vanilla with salted caramel, cookie dough, cheesecake, or carrot cake. They also offer an exclusive product: umisan. It’s their own interpretation of the croissant and traditional pastries with a Japanese twist, which comes in sweet and savoury versions, or with fillings such as tiramisu, green tea, raspberry, chocolate, cinnamon, kouign amann, or popcorn, the star dish.
The menu also has cakes as well as special limited-edition creations according to the time of year and traditions in Madrid.
