After several years in a small establishment on Calle Pensamiento, where it was awarded a Michelin star and a Repsol Sun in 2023, the chef David Arauz and sommelier Álvaro Prieto are reopening Zuara Sushi at the Hyatt Regency Hesperia Madrid Hotel, where they share the space with restaurants such as Leña and Smoked Room, with the latter having been awarded two Michelin stars.
The new Zuara offers a more informal experience, divided into two spaces, yet with the same essence. Zuara Tēburu boasts six tables to enjoy a careful selection of sushi and a Japanese menu featuring hot and cold starters, as well as desserts. Zuara Omakase is its award-winning traditional Japanese bar, where diners place their trust in the Itamae’s criteria.
