In early 2008, chef Paco Ron moved to Madrid after winning a Michelin star with his restaurant in Asturias and opened this restaurant which serves simple Asturian cuisine, leaving out what is not essential in the dish and trying to achieve clarity in the flavours. Following Ron's departure in 2023, Enrique Limón is now at the helm.

Viávelez boasts a sophisticated tapas bar on the ground floor and a small minimalist dining room in the basement.

The establishment serves two menus: one for the tavern and another for the restaurant. There is also a daily menu (at lunchtime from Tuesday to Friday), which is available in a reduced version in the tavern.
