Standing on the site of one of the legendary concert venues of the "Movida Madrileña” cultural movement, El Garaje Hermetico, this restaurant is known for its commitment to sustainability, prioritising the reuse of materials and bioconstruction, and for its contemporary culinary creations made using Spanish ingredients sourced from small, local farmers. All this has helped the restaurant earn a green star in the 2025 edition of the Michelin Guide.
The menu is composed of simple dishes that showcase the ingredients used.
The design of the space and the furniture is the result of a collaborative and co-creative project led by architecture studio Selgascano and designer Andreu Carulla. Interventions and the introduction of new elements have been minimised, ensuring they do not overpower the old structure so as to preserve the original essence of the place.
The space is spread over different levels that create different settings and perspectives, with the kitchen at the visual centre, which in turn generates the space around it. They have preserved and enhanced the structure of the roof formed of slender concrete trusses and steel cables, typical of Madrid architecture of the fifties and which today have practically disappeared.
TRAMO is almost 100% energy self-sufficient and is also a space that generates green energy and sells what it does not consume.
In addition, it is also committed to the social inclusion of people who often face difficulties accessing the job market.
