Next to Plaza de las Salesas you’ll find this restaurant-bar founded by Alberto Zoilo Álvarez, who set out to recapture the essence of a traditional Madrid bar. Here they serve a wide variety of dishes along with an extensive but well curated wine list, and delectable cocktails focused mainly on tequilas, mezcals and whiskies.
Situated on Calle Barquillo, the distinctive Roostiq Bar effortlessly combines elegance and accessibility to create a cheerful and dynamic atmosphere. It can accommodate around 100 diners.
The menu prioritises quality, locally sourced ingredients and has been devised and curated by Zoilo himself along with David Blanco, the head of R&D at Roostiq. It is divided into 9 sections: starters and raw dishes, followed by a selection of free-range cured meats and charcuterie, and then a section dedicated to organic vegetables and eggs. Following that, there is a section of 'Bar Classics', another one of grilled seafood, and the last one dedicated to grilled meats and fish, respectively, with a variety of side dishes. The exquisite selection of desserts have been designed by Raquel Álvarez.
The wine menu, also curated by Zoilo Álvarez alongside sommelier Pablo Sánchez, contains around seven hundred different bottles, with an exceptional selection of champagnes and burgundies.
The cocktail menu is also outstanding. Here they offer more than a hundred creations, focusing particularly on tequilas, mezcals and whiskies, with over 300 drinks made using these spirits. Behind every cocktail is Gabriel Gonzalez, head of mixology.
