After closing his restaurant with two Michelin Stars at the Hotel Único, chef Ramón Freixa has fulfilled his personal dream of opening two restaurants in one: Tradición and Atelier. Two concepts in the same space spread over two floors with 600 square metres in the heart of the Salamanca District.
At Ramón Freixa Tradición, the chef offers a culinary experience based on his roots, Spanish cuisine and quality ingredients. The restaurant is located on the upper floor with seating capacity for around 120 people and features different dining rooms, a bar with a ham cutter, a cocktail bar and a red wine cellar.
The menu is based on seasonal and locally sourced products and offers a wide range of options, including appetisers, such as gildas, croquettes or Russian salad, meat and fish dishes, rice dishes, stews and casseroles.
Chef Ramón Freixa, who has become one of the leading figures in contemporary Spanish cuisine, is originally from the Barcelona municipality of Castellfollit de Riubregós. After running the family restaurant, Racó d'en Freixa, which boasted a Michelin star, he moved to Madrid and launched Ramón Freixa Madrid at the Hotel Único. This restaurant was awarded two Michelin Stars, the first in 2009 and the second in 2010.
Throughout his career, the chef from Catalonia has received numerous awards and recognitions, published several books and also has his own catering service, Ramón Freixa Catering.
