The new JW Marriott Hotel Madrid that opened recently in Plaza de Canalejas boasts this restaurant run by the Sandoval brothers, who will be responsible for the food served at the luxury five-star hotel, from breakfast to dinner, as well as a cocktail bar and room service.
Chef, Mario Sandoval, winner of two Michelin stars for Coque, offers Qú diners a gastronomic experience based on traditional dishes prepared using local products with a gourmet twist, which are accompanied by an exquisite selection of wines and cocktails. Its dishes include the famous suckling pig. The menu includes its famous glazed suckling pig and new dishes such as the Wellington Steak.
The restaurant puts a contemporary, cosmopolitan spin on traditional Spanish cuisine, offering a tasting menu and an a la carte menu that includes individual dishes and sharing platters. The drinks menu, supervised by Rafael Sandoval and managed by the prestigious sommelier Valentin Checa, offers more than 200 wines from the world’s biggest wine-producing countries.
At QU, everything is designed to provide maximum enjoyment, which is reflected in the attention to detail. The dining experience is presented with much ceremony, led by Juan Diego Sandoval. The service is delicate, detail-oriented and harmonious, with dishes plated and finished at the table itself by the three maîtres d’s - Gary Dalesme, Fernando Armario and Alex Vaduva – who have been trained in the service protocols of QU’s parent restaurant Coque.
Qú also serves breakfast, for which it counts on the efforts of the baker Andrés Lesmes and the pastry chef Juanjo López, who will be responsible for baking the bread and pastries to be savoured by guests. Chocolatería San Ginés will supply the hotel with churros.
