The brothers, Alex and Adrián de la Fuente opened this restaurant in 2022 in Arganzuela, close to the Enrique Tierno Galván Park and the Planetarium. The most traditional cuisine is revamped, featuring dishes from Madrid that have practically been forgotten but have now been turned into a personal and modern style with touches of haute cuisine.
The kitchens of this small and cosy establishment, with seating for 28 diners are where chef Alex de la Fuente, who holds the title of Best Chef in the Region, puts into practice all the knowledge he acquired after his training at the Casa de Campo Hotel and Catering School and his time in the kitchens of great chefs such as Santi Santamaría, Sergi Arola, Fernando P. Arellano, Ricardo Sanz, Ramón Freixa and Roberto Ruiz. Committed to recovering forgotten recipes from Madrid and updating them, he searches through old recipe books, history books and poems from the Golden Age to bring them back to life in a new form.
The menu consists of 11 dishes and two desserts designed to share, whereby the dishes are rotated. It serves revamped cuisine from Madrid adapted to today’s palates and techniques whilst maintaining the basic nuances and ingredients.
The wine cellar and the cocktail bar also incorporate typical notes from Madrid. Inspired by the kiosks that sold barley water and horchata, which are practically extinct today, it has created four cocktails with chulapo touches.
It also boasts a tasting menu with six courses and as of March 2025, it will recover the A stroll through the streets of Madrid experience, a monthly menu linked to the city’s history and gastronomy.
