Under the management of Angelo Marino, who also runs the well-known Mercato Ballaró, Premiata Fornería Ballaró combines the origins of the tasty traditional Italian food with careful preparation, using high quality seasonal produce.
The kitchen at Premiata Forneria Ballaró revolves around the authentic wood-fired oven, where most of the dishes on the menu are cooked, which are designed to share and on which the pizzas are made from a selection of whole-wheat flours, left to ferment for a long time, baked in a thin and crunchy mass to which quality ingredients are added, changing according to the season. Its pasta dishes, which are also cooked in the wood-fired oven, include several dishes from Angelo Marino’s kitcchen, such as the classic lasagne, 'linguine aglio olio y peperoncino' or 'caseccere alla diavola'.
