This innovative culinary project, created by two young chefs, Arán and Noé, combines fine dining with a floral setting to offer a unique sensory experience. From their restaurant in Fuente del Berro, in the Barrio de Salamanca neighbourhood, they offer an innovative tasting menu inspired by flowers.
The restaurant is just 60 m2 in size, accommodating a maximum of 16 diners, with a dining area and a showcooking bar. The décor is organic with iroko wood features, including the 6-metre bar imported from South America. There is wi-fi throughout these accessible premises, which offer sufficient space for a wheelchair.
The culinary proposal devised at Pipilacha aims to restore flowers to their rightful place in the kitchen, not as mere decoration but as the heart and soul of each dish.
The 15 courses included in their tasting menu are made with local products and fresh ingredients. Each one is focused on a flower, using its flavour, aroma, colour or texture to 'pair' the dish. The menu also includes 7 appetisers and two desserts.
In addition to the proposed menu, they have vegan and vegetarian dishes as well as options for people with gluten and lactose intolerance.
