This innovative restaurant serving micro-season cuisine with French influences was opened in November 2023 by chef Coco Montes, who trained at Le Cordon Bleu in Paris and he is a disciple of the renowned Alain Passard (awarded the Prix au Chef de l’Avenir 2025 award by the International Academy of Gastronomy) (from the French L'Arpège restaurant which boasts three Michelin stars). Pabú has revolutionised the Madrid food scene, combining the technique of French cuisine and focusing on regional produce from the region. It has a Michelin star and a Repsol Sun.
Located close to Paseo de la Castellana, and very close to the Bernabéu football stadium, Pabú has two different areas, combining design and comfort. It boasts a cosy area at the entrance for aperitifs, where there is also a reserved area for 14 diners. The main hall, which is more spacious and open plan, is divided into a capacity for 30 people, from which the kitchen and the wine cellar can be seen.
The restaurant menu focuses on the vegetable world, but also includes fish and meat of extraordinary quality. Each day, eight different dishes are prepared, which can be savoured in its three tasting menus: Pate (long), Pate a Medias (short) and Bubú, or as an á la carte selection and it is not necessary to be served to the whole table. The ingredients are absolutely fresh and are received daily.
The wine list, which is changed daily, offers an extensive selection of over two hundred wine references and around 40 references from the prestigious AOC Champagne, providing a wide range of options for the most discerning palates.
In 2024, Pabú was named Best New Restaurant 2024, an award granted by the leading magazine specialised in gastronomy, Tapas, by the Forbes Group. It was also named Restaurant of the Year in the Community of Madrid by the Buena Mesa Brotherhood.
