Its name already defines the absolute star of its cuisine: the tasty, traditional and incomparable Spanish potato omelette, which is still prepared in this establishment in the same way that made it famous at La Ancha on calle Velázquez in the 60’s. In fact, this variety appears on the menu under the name La Velazqueña, although it is followed by seven other varieties: cod shavings and cream of leeks, potatoes and Galician-style octopus, black squid, potato chips with a side of salmorejo, stew with tripe, garlic soup and funghi porcini, mushrooms, eggs and truffle.
But omelettes are not the only thing that comes out of their stoves, since their menu is open to all sorts of starters, salads and vegetables –like the warm foie-gras treats, the Iberian ham croquettes, the chicken and arugula salad with honey dressing or the green asparagus with melted Masdam cheese-. For those who have a sweet tooth, there is nothing better than ending a meal with the Brie cheese flan or the warm carrot cake with coconut ice-cream.
