Box number 39 in the newly refurbished Santiago Bernabéu stadium is home to this restaurant that serves Japanese haute cuisine, founded by the Bambú group in 2005 and headed up by brothers Fernando and Pedro de León. Heir to the gastronomic excellence already demonstrated at the 99 Sushi Bar (recipient of a Michelin star) and the world of luxury, the new space is more focused on the most exquisite and select nightlife.
KŌ by 99 Sushi Bar is a modern izakaya spread over 600 m² that can accommodate up to 99 people. In addition to the dining area and terrace, it has different VIP Rooms, designed for customers seeking greater privacy. The décor is exquisite, with luxury finishes, natural materials such as carefully selected stone and wood from different areas and beautiful lighting.
The menu has been devised by the Culinary Director of the company, Rubén Guerrero, who has worked for years to craft a proposal that follows in the footsteps of 99 Sushi Bar, but with a more contemporary feel and designed specifically to share. Many of the dishes are prepared using the Japanese charcoal grill known as a robata, and the menu as a whole pays tribute to the most sophisticated Japanese haute cuisine made from luxury ingredients with dishes that strike a balance between classic flavours and personal touches.
The executive chef is Noam Herrera, who for years worked for 99 Sushi Bar and was the second head chef at Saddle.
They also have an extensive wine menu, curated by Mónica Fernández, director of Grupo Bambú in Spain and winner of several awards, including the National Gastronomy Award for ‘Best Maître d'’ in 2016 and the Prix au Sommelier (Best Sommelier in the World) award from the International Academy of Gastronomy, in 2017. The restaurant also serves a wide variety of premium cocktails.
KŌ will soon be unveiling a further two branches: one in Abu Dhabi, which is scheduled to open in summer 2025, and another in Dubai in 2026 on the rooftop of a skyscraper in the new Dubai Hills area.
