The reputed chef, Mario Payán, first collaborator of Ricardo Sanz in Kabuki, offers the possibility of sampling genuine kaiseki cuisine (traditional Japanese cuisine) in the well-known Chamberí neighbourhood in a restaurant inspired by traditional Japanese taverns. A menu, which changes each day (omakase) and is prepared there and then by the chef can be savoured there.
The establishment has an understated decoration and consists of a marble bar with 12 seats, a dining room with six tables and a private lounge.
The menu is made up of 15 or 20 pieces of sushi, a tartar and five hot dishes, among which specialities such as oyster blended with cucumber, melon and pickled cherry, lemon fish in tartar, lettuce stalks, miso, tuna and peanut, tarantelo tartar, spring onion, algae bread and caviar butter, daikon radish with meat and ponzu sauce, tsukune with cucumber, ume and shiso and a wide variety of nigiris can be savoured.
