The Kabuki Group's latest gastronomic proposal is located in the Salamanca District. Under the orders of Mexican chef Alejandro Durán, a great innovator of fusion cuisine and expert in Japanese techniques who has been part of the Kabuki Group since 2013, Kabuki Madrid is a restaurant without artifice in which the product and design speak for themselves.
The establishment occupying 500 m2 has been designed by the architect Maurice Sáinz, from MS Design, who has created a sophisticated, elegant and minimalist space with a total capacity for 98 diners, including the soon-to-be-opened terrace, creating a cosy and sober atmosphere where black and ochre tones predominate, as well as contrasts created with the lighting.
The restaurant is divided into two large areas, the dining room and the bar, each with its own character. The bar area has a large cocktail bar, which separates the bar from the dining room, and spectacular polished black granite round tables. Both spaces are connected by an ochre-coloured carpet.
Its cuisine is characterised by the use of quality ingredients and the purest techniques, especially the cuts, their precision and respect for the organic structure of the food.
The menu boasts exceptional fish. It features both traditional and minimalist Japanese dishes. The chef's Mexican influence is also evident. There are also have several vegetarian options.
The menu is rounded off with a wine cellar of more than six hundred references under the sommelier Silvia Ortúñez, with national and international wines, highlighting an important range of Champagne, Riesling and Sake. Pairings also include Japanese and Chinese tea, beer and cocktails.
The sushi bar has six seats from which to enjoy the work of the sushi chefs. The wide range of sushi and sashimi on offer includes the great classics of Kabuki Cuisine, such as fried quail egg nigiri with white truffle pâté, pa amb tomaquet usuzukuri, canary green mojo and potato nigiri or a new addition, beef nigiri marinated in toki, macha sauce and a few drops of the prized Hibiki Japanese whisky.
Kabuki Bar
One of the new features of Kabuki Madrid is its spectacular bar, run by the bartender Julián Gómez, a temple of cocktails with a short list to enjoy the best nigiris and classic makis as well as a selection of Japanese tapas in Kabuki style, all day.
Sake, umeshu, Japanese whisky, matcha tea, ginger, yuzu and other ingredients are served along with classic cocktails. Japanese products feature in the most innovative creations.
