Chef Floren Domezáin is returning to Madrid in partnership with Grupo La Fábrica with this new restaurant located in Calle Génova, between the neighbourhoods of Salesas and Chamberí. Renowned for his expert use of vegetables in his dishes, grown in his garden in Tudela, his new restaurant focuses on typical ingredients and grilled dishes from the region of Navarra.
The restaurant is decorated in a cosy rustic style, using wood, stone, and shades of green, reminiscent of nature. The space is spread over two floors, with a main dining area and a private area, where you can hold all kinds of events or meetings. There is also a living wall inside.
The menu proposed by El Huerto puts the chef’s own personal touches on the best traditional fare from Navarra, including some of Domezáin’s most popular dishes, such as Floren’s heritage tomatoes. Vegetables are the star ingredients, although the restaurant also serves meat and fish.
