Since 2018, Peruvian chef Luis Arévalo has been running this Nikkei cuisine restaurant (fusion of Japanese and Peruvian cuisine) located in the Guindalera neighbourhood, in the same premises where he founded Kena years before. Gaman represents the evolution of this cuisine, more cosmopolitan and global, where the product, treated with the most traditional Japanese techniques, becomes the protagonist.
Arévalo offers his diners his most personal project, in which he develops a freer and more relaxed cuisine, showing the best of Japanese and Peruvian gastronomy. At Gaman you can choose any of the dishes on the menu, consisting of a wide variety of gyozas, sanguchitos, sashimis, usuzukuri, ceviches, tartares, tiraditos, sushi in all its varieties, or put yourself in the hands of the Peruvian chef with his impeccable technique and creativity. The proposal is completed with an extensive wine list, sakes and pisco-based cocktails in a cosy atmosphere.
There are also several tasting menus: special Nigiri tasting (16 and 24 pieces), Alma Nikkei menu and Executive Menu.
