At the Gran Madrid Casino Colón, you’ll find this new restaurant headed up by chef Juanjo López, creator of La Tasquita de Enfrente and a key figure on Madrid's culinary scene. It offers a reinterpretation of traditional Madrid cuisine, focusing on respect for the ingredients and seasonality. The dynamic and seasonal menu highlights each ingredient without any artificial elements.
Calvero combines tradition and modernity in an elegant yet cosy setting, inspired by the calm and charm of a woodland clearing.
Calvero's menu features dishes that showcase seasonal ingredients, prepared using refined techniques. Putting a creative and cosmopolitan twist on local cuisine, the chef offers essential traditional dishes such as the gilda [olives, anchovies, and guindilla peppers served on a toothpick] sirloin steak sandwich, Russian salad and callos [tripe stew], as well as their renowned steak tartare, which won an award at Madrid Fusión 2025.
Since the restaurant is located in a casino, it is only accessible to adults. Serves dinner only.
