Opened in early 2023 in the Saldaña Palace in the heart of the Salamanca District, this sensory restaurant is perfect to enjoy at any time of the day. Its culinary offer boasts free and unconstrained cuisine that connects international cuisine with Latin America.
ABYA represents a unique and innovative concept that combines art, culture and gastronomy. It is a place where creative expression intertwines with authentic flavours and cutting-edge culinary techniques.
The establishment is divided into three floors which are interconnected, each offering different culinary experiences.
The Ground Floor houses the restaurant’s most dynamic space, with high tables, a non-stop kitchen, DJ and excellent entertainment, accompanied by cocktails. With views over Calle Ortega y Gasset, this space serves tapas, aperitifs or an extensive menu, depending on the time of the day.
The First Floor is home to a lounge with low tables, where food and art are the main features. It is the perfect space for business lunches or dinners in a relaxed and formal atmosphere.
The Second Floor is the most exclusive space in the palace, which is ideal for more private meetings. It has VIP areas adapted to all needs.
ABYA takes its name from the oldest known denomination used to refer to the Americas and it means ‘land of life’ or ‘land in its full maturity’, an idea reflected in the restaurant’s gastronomic proposal, which will offer options for any time of the day, from lunch through to the evening.
The man behind the Abya menu was the chef Aurelio Morales, who embarked on this project after leaving Cebo, with which he was awarded a Michelin Star and two Repsol Suns. In mid-October 2024, Morales bid farewell to his job at Abya to embark on new haute-cuisine projects.
