After more than 40 years in the town of Humanes, Coque established itself in the summer of 2017 in the Chamberí district. From its new location, it continues to offer diners a unique gastronomic experience under the guidance of chef Mario Sandoval, through a cuisine based on local produce, fermentation, and their flagship ingredient: the egg. This cuisine incorporates the latest culinary research, stemming from the restaurant's collaboration with researchers from the CSIC (the Spanish National Research Council). Coque boasts two stars Michelin stars and a Green Star for its commitment to sustainability.
The Sandoval brothers' restaurant spans 1100 square meters across two floors, accommodating 70 diners. The space is divided into a bar-cocktail lounge, spread across several rooms with large armchairs, where the gastronomic experience begins; a cellar with 3000 wines; the open kitchen, where Mario Sandoval welcomes diners; and finally, the dining area, divided into two spaces, one indoors and another with large windows facing the street.
Coque serves a new tasting menu, Chamberí, a tribute by the Sandoval brothers to the neighbourhood that took them in when they came to the capital. It is a menu that explores the essences and flavours of the home with family and their work in mind. It also has vegetarian and vegan versions.
In addition to the stars awarded by the Michelin guide, Coque holds three Suns from the Repsol Guide, as well as the Sustainable Sun #SpanishFoods distinction.
