Chef Rubén Hernández Mosquero, originally from Reina (Badajoz), is returning to Madrid to open his first solo restaurant: EMi. It is an intimate space whose cuisine is inspired by the principles of New Nordic Cuisine, in conjunction with Asian techniques and a firm commitment to seasonal products.
Throughout his career, Rubén Hernández has worked in the kitchens of Atomix in New York, one of the best in North America; Minibar by the chef, José Andrés; Noma, the Danish restaurant crowned as the world’s best restaurant for many years; and Azurmendi, run by the renowned chef, Eneko Atxa, among others. A career with different influences that are now reflected in this personal project based on technical, honest, unpretentious and profound cuisine.
EMi restaurant serves a unique menu that is articulated into diverse dishes. The establishment is divided into two floors and boasts an open kitchen, a bar and also a private space. The wine cellar is run by the sommelier, Miguel Ángel Millán, who was recognised as the World's Best Sommelier by The World’s 50 Best in 2023, and has more than 1,000 carefully selected reference to accompany the menu.
