The proposed route to savour the best tapas around the city is holding its fourth edition from 10 June to 6 July. For yet another year, some of the city’s leading establishments will be participating and the new features include the incorporation of Salino, winner of the Best Iberian Ham Croquette Prize at Madrid Fusión 2026.
This Iberian ham croquette route, created by Sánchez Romero Carvajal once more presents an enjoyable plan now that World Tapa Day (16 June) is approaching. This latest edition will not only feature croquettes, but many of the participating establishments will serve tapas created with ham, making it one of the most irresistible plans in June in Madrid.
The fourth edition welcomes new additions, such as Salino, winner of the Madrid Fusión 2026 international competition in the category of the Best Iberian Ham Croquette, as well as other establishments, such as Los Gabrieles, Árdia, Rita Sibarita, Casa Vega, Cachivache (Serrano), La Raquetista, Cachivache (Montecarmelo) and El Gallego.
There will also be the classics of the route, which have become not to be missed stops, such as Casa Orellana, Tatel, Casa Salesas, Café Comercial, 11 Nudos, El Escondite de Villanueva and Virrey. They are all references that help to consolidate this event as one of the major routes for those who love croquettes.
This route offers the opportunity to discover new flavours, whereby each establishment serves its own interpretation of such a versatile product. From flat green beans with Iberian emulsion and ham salt from Los Gabrieles, to the ham and truffle “bikini” sandwich at Café Comercial or the Peral cheese mousse and Iberian ham roll at Virrey.
There will be no lack of creations, such as white asparagus with Béarnaise foam and Salino ham, stuffed eggs and Jabugo ham from La Raquetista, or Cachivache’s tapa, featuring crystal bread, vegetable sauté, quail eggs and Iberian ham. The route continues with toast topped with fresh tomato emulsion at El Escondite de Villanueva and artichokes with confit egg yolk and ham at11 Nudos.
