From the founders of Whisky Club Madrid, this whisky bar first opened its doors back in March 2024 in the city's Chamberí district, offering a wide variety of signature cocktails and refined cuisine crafted by chef Jose Ignacio Ruiz. It was named the Best New Bar of the Year at Fibar Valladolid.
Spread over 300 m2, with an industrial look, it is divided into different spaces with exceptional attention to detail. The main area revolves around the bar itself. Down a few steps, there is a lounge area furnished with Chesterfield sofas and exposed brick walls. There is also a curtained-off VIP and tasting area, with a large glass display cabinet to show off their extensive whisky collection. To the right of the bar, there is an interior terrace with high tables (open only when the weather permits). On the ground floor, there is a Speakeasy hidden behind a bookshelf, for members only, with a bar for tasting events.
Holy Drop has three menus: one for whiskies, one for cocktails and one for food. It currently serves over 850 varieties of whisky from several countries.
Chef Jose Ignacio Ruiz is in charge of the culinary offering, designed for sharing and pairing with spirits. The dishes are inspired by the flavours of the chef’s origins and his culinary experiences.
