Pablo Caballero and Nolo Botana founded Hola Coffee in 2016, a company dedicated to the world of speciality coffee. Their philosophy is based on quality, proximity and accessibility. In Madrid, they have two coffee shops and a roastery. One of them, located in the Barrio de Salamanca, ranks 12th in The World's 100 Best Coffee Shops 2025, the first ranking that recognises the best speciality coffee shops in the world.
In their two locations in Madrid, at 42 Calle Lagasca (Barrio de Salamanca) and 33 Calle Doctor Fourquet (Lavapiés), they showcase their approach to coffee service, offering a varied selection of coffee-based drinks, from a classic specialised menu to signature drinks that change with each season, accompanied by freshly made artisan pastries and savoury snacks (toast and sandwiches). At their roastery at 109 Calle Sepúlveda (Lucero), they roast their own coffee, which is served at the best speciality coffee shops and is also shipped online to coffee enthusiasts around the world.
The Lagasca coffee shop is a small space for around 49 people, decorated in a minimalist style, but playing with colour and flowers to bring it to life.
In addition, Hola Coffee has also become a promoter of knowledge through its academy, running courses for baristas and workshops for coffee enthusiasts at all levels, with their own certification or the option to obtain the Specialty Coffee Association's internationally recognised certificate.
