Located on the site of the once legendary Mesón La Paloma, this bar, run by Yajaira Malavé and Cristina Bonaga, presents a modern take on a traditional Spanish bar, with the popular snack known as the ‘gilda’ (olive, anchovy and gherkin on a cocktail stick) is the star dish of a simple but delicious no-frills menu.
La Gildería first opened in 2021 and, alongside its famous ‘gildas’, it offers different tapas, preserves, rolls, pickles... with a menu that expands every season.
The bar can accommodate up to 33 people and has been designed to create the feel of a traditional Spanish bar but with a modern twist. There are high stools so you can sit up to the bar, as well as a further two high tables.
Alongside this project, they launched the Gilda Club, a pop-up night club (on account of the fact they couldn’t accommodate it on the same premises), which they have set up in various clubs such as “Sala El Sótano”, “Sala El Sol” and “Club Malasaña” and which has featured sets by leading DJs on the local, national and international scene.
They have also organised events serving their famous snacks and nibbles on the rooftop bar of UMusic Hotel Madrid.
In December 2023, they opened a second venue in Chueca, Gilda Haus, combining a nightclub, bar, food and cocktails.
