Devil's Cut

The Chamberí district first welcomed this whisky bar back in March 2024, offering a wide variety of signature cocktails and refined cuisine crafted by chef Jose Ignacio Ruiz. It was named the Best New Bar of the Year at Fibar Valladolid.

Spread over 300 m2, this sophisticated bar has a cosy, contemporary vibe, divided into different spaces with exceptional attention to detail. The main area revolves around the bar itself. Down a few steps, there is a lounge area furnished with Chesterfield sofas and exposed brick walls. There is also a curtained-off VIP and tasting area, with a large glass display cabinet to show off their extensive whisky collection. To the right of the bar, there is an interior terrace with high tables (open only when the weather permits). On the ground floor, there is a Speakeasy hidden behind a bookshelf, for members only, with a bar for tasting events.

Holy Drop has three menus: one for whiskies, one for signature cocktails and one for food. Currently, it offers more than 850 varieties of whisky from several countries, as well as a curated selection of rums, gins and cognacs.

Chef Jose Ignacio Ruiz is in charge of the menu, which features flame-grilled cuisine designed for sharing and pairing with spirits. The dishes are inspired by the flavours of the chef’s origins and his culinary experiences.

Holy Drop is also the headquarters of Whisky Club Madrid, a community of true whisky enthusiasts, which hosts private tastings, presentations, trips and exclusive experiences around this drink.
