The sommelier Marcos Granda, with five Michelin stars to his name, offers Japanese haute cuisine in his second restaurant in Madrid (the first is Clos Madrid), an intimate space for just six diners, where chef Tadayoshi Teddy Motoa explores the evolution of Japanese from past to present. It was awarded a Michelin star in the 2024 edition of the prestigious guide.
The modest, elegant restaurant, just 55 m2 in size and decorated by Alejandra Pombo, has a single sushi bar around which diners are seated. As soon as you enter, you will find the wine cellar, where guests are greeted by Hilda Olvera, the restaurant manager and sommelier, with a glass of champagne.
Toki has two tasting menus, one for lunch and one for dinner, both of which use the best raw ingredients and excellent rice. For both menus, Tadayoshi prepares the dishes in front of the diners. Time is one of the fundamental ingredients; all the preparations are carried out with the necessary sense of calm. The chef uses three different recipes and marinades to enhance the intensity of flavour in the rice. The dishes will vary depending on the available ingredients.
There is also a wide variety of sake to choose from.
