'Miyama' means 'pretty mountain' and the restaurant is certainly pretty, with décor featuring light woods and a stone floor. There is a sushi bar at the back, behind which a window lets in a pleasing natural light and allows you to see an internal patio with a carefully tended oriental garden.
Miyama's cuisine is ambitious, going beyond the conventional favourites sushi, sashimi and tempura with imaginative touches and the careful use of fusion.
The restaurant’s toro is considered the finest in Madrid and is especially recommended.
Open: Mon - Sat 1.30pm - 4.00pm, 8.30pm - midnight
