Having tapas is one of the traditions par excellence of Spanish culture and here Roncero has decided to innovate while always maintaining the roots of the style to achieve perfection of the sacred tapa. The decoration of the space along with its culinary offering responds to the creative renewal of the traditional tapas bar.

Everything that Estado Puro offers is a real surprise, from the moment the customer enters the premises and receives a smart little welcome pack with the menu, a serviette and cutlery. The Estado Puro menu includes hot and cold tapas, toasts, rolls, salads, some desserts and – for those who want a little more – half portions of rice, meat and fish.

At the table, you can have tigres like you’ve never seen them before – like a large bread-crumbed pearl of mussel and béchamel sitting on its shell; alioli potatoes - like a work of cubist art; their club sandwich – like a surrealist spiral; and dishes such as cockles and mussels in brine, served in a fun tin.
