Popular legends and a hundred keys that the Palacio de Linares kept closed for a century have inspired the name of the new restaurant that opened its doors at the headquarters of Casa de América (replacing the Cabrera Casa de América).
Cien Llaves is the materialization of a collaboration between Juanjo López Bedmar - owner, ideologue and chef of one of the most prestigious restaurants in Madrid, La Tasquita de Enfrente - and the Le Cabrera Group, pioneer in the design and management of places of reference for the public of Madrid.
Juanjo López Bedmar created a menu from traditional-based dishes, each with its history, which allows for light bites to the classic menu of homemade stews, fish, meats and offal dishes. All made with raw ingredients selected by a chef on a first-name basis with his suppliers, executed "with more fun than pretense" and "to remain in the memory of the customer" and considered towards all people, times and desires. All offerings can be enjoyed in half portions (even stews) so everyone can choose what they want to eat: "the customer decides what they fancy and we make it make sense".
