This restaurant, embodying the DSTAgE concept – Days to Smell Taste Amaze Grow & Enjoy – is the new project by renowned chef Diego Guerrero. With this new establishment, the chef makes his debut as an entrepreneur with a commitment to a haute cuisine format evolving within the line developed in recent years (baptised at the time as “The Silent Revolution”), under a “concept of haute cuisine which is exempt of many courses” which has earned him recognition in the Michelin Guide 2015.
The chef, born in Vitoria en 1975 and trained in establishments such as the headquarters of Martín Berasategui in Lasarte (Guipúzcoa) and Goizeko Kabi (Bilbao and Madrid), he has been working in the capital for the past few years, where he was awarded two Michelin stars at El Club Allard, restaurant which he left in October 2013.
Located in Barrio de Chueca, DSTAgE occupies 300 square metres, spanning over two floors. On the upper floor, the client begins the gastronomic experience with some snacks at the bar, before moving on to the dining room, which is set around a patio. At the back of the restaurant and on sight from almost every corner of the establishment, the kitchen opens out onto the dining room, where Diego Guerrero works alongside his team in full view of the public. From there, the chefs come out of the kitchen and mingle with the dining room staff to serve the diners.
Meanwhile, on the lower floor, DSTAgE houses a space with a kitchen and a large table, ideal as a private dining room, show cooking, events area and classroom for cooking classes, as well as a Diego Guerrero’s work and creativity studio. On this ground floor, designed as a BACKDSTAgE, there is also a wine cellar (made up of 200 national and international references) and the entrance to a patio with plants and aromatic herbs, which form part of the offer.
DSTAgE does not have an á la carte menu but has two tasting menus: DTASTE, with 10 dishes at a cost of 88 euros; and DSTAgE, with 13 dishes and a cost of 118 euros (both with VAT included). The dining room has capacity for 40 diners.
