Rice is the restaurant's speciality and it serves more than 25 varieties. Chef Rubén Ortiz offers a "chromatic menu" in which each dish has a particular colour so that they are a pleasure for taste and sight alike. For example, white: Aynaelda salad; yellow: vegetable tempura, yuzu-mirim cream and grapefruit garlic mayonnaise; orange: mini egg and ham burgers with sweet potato chips; red: beef tartare, oriental tomato and acorn flour; purple: beetroot salmorejo with grilled octopus and pickles; green: Roman salad with marinated chicken; black: squid in their own ink. Desserts also feature their own range of colours, with pink for red fruit frappé, raspberry clouds and candy-floss sorbet or brown for the always popular chocolate trilogy.
The Aynaelda restaurant in Aluche recently opened its summer terrace, where diners can enjoy a meal in the open air without feeling hot, thanks to the innovative air-conditioning system.
