The premises where the Arce restaurant was until May 2023 is now home to the new gastronomic project of chef Andrés Madrigal, who has been awarded two Michelin stars during his professional career. The Madrid-born chef presents dishes in which tradition and the avant-garde go hand in hand, with nods to his time at Balzac and his ten-year stay in Latin America.
The dining room at Per Se Bistró stands out for its luminosity and sobriety, with a decoration in which the ceramics made by Valle García, who also signs the plates on which the food is presented, shine with their own light.
As in his previous restaurants, Madrigal's style is characterised by the use of excellent products, innovation and fusion of flavours. Diners can opt for a tasting menu called Hambre, apetito o gana, in memory of Arce's chef, Iñaki Gamba, or a menu consisting of fifteen dishes that will vary, called Sin latitud, in which seasonal produce is the protagonist. The proposal is completed with a wine cellar made up of a selection of national and international wines.
