The 12th Madrid Fusión brings us the latest trends in creative cuisine.
Over 100 chefs from around the globe are taking part in the most important international food fair in the capital: an essential date for discerning palates.
The theme of this year's fair is 'Inspiration is in the Street', with a focus on urban cuisine. Flemish fare and gastronomy from the Andean region of Bolivia, Peru and Chile will also be in the spotlight.
Madrid Fusión is now two fairs in one. In addition to be a date with cutting-edge
cuisine with the most imaginative, appealing recipes from this country, this year it has added 'Saborea España' (Tasting Spain), a new section dedicated to traditional fare featuring the participation of top Spanish chefs.
For three days, the best chefs in the country will come together at the Campo de las Naciones Convention Centre to present their latest ideas at Madrid Fusión.
Joan Roca, Quique Dacosta and Gert de Mangeleer, among others, will talk about culinary creativity in urban contexts. They will explore city restaurants that look to the country such as the ones run by Eneko Atxa and Pascal Barbot; or to the sea, as is the case of Ángel León, the Flemish chef Filip Claeys and the Sicilian star Pino Cuttaia.
The apogee of bars will be analysed through two very different examples: Minibar (Washington) and StreetXo. And the fair will also examine the phenomenon of young chefs and their trendy establishments such as Septime and Chez José.
Andoni Aduriz and the neuroscientists Luis Castellanos and Adrián David Cheok of Japan will talk about new culinary sensations in digital cities 2.0
In addition to presentations, the general public will also have the chance to enjoy select products offered by different exhibitors, a Mini Fair of gourmet products and Enofusión ('Wine Fusion'), taste demonstrations and cooking contests.
